Damn I've been craving some BBQ. Most bbq places in Cali are s.h.i.t.. Theres a real good one but its an hour and a half ride each way all highway. Might have to break down and go.

there is an old black man who set`s up shop at HWY 175 & Kleberg road on the weekends
brisket, ribs, and pulled pork . That fellow sure can cook !!

Yea, you Suck! I sit down with my nice frozen Healthy Choice meal and go to Active topics and see this.
BUT on the Plus side, being from NC, I have two very good Authentic BBQ joints within 6 miles of my office, guess what I'm having for lunch tomorrow! Yea, probably another meal in a box cause I can't get out of the office damn it.

BBQ Oh Yeah! We got BBQ joints all over West Monroe, it's spilling out into the streets. I work with a young engineer who does time between here and our office in Raleigh NC. He is always giving us the low down on some NC BBQ. Says he's going to fuse our Cajun style BBQ with NC sauces and start a new BBQ revolution. We have volunteered to be his taste testers. We watch BBQ Pit Boys, Pit Masters and the rest of them. It's BBQ, what's not to like

I never knew there was actual a food called BBQ (pork, ribs etc) when I was growing up in WV.. I always figured BBQ was more an activity than food... Throw a hot dog on the grill, its BBQ..L

I like the Carolina sauce man myself. There's a great little restaurant on Snowshoe Mtn WV that makes some of the best. They won't sell any to the public though. I'm headed over that way in a few weeks to get my annual allotment...

My Dad was a complete master at ribs. He pare-boiled them in lots of spices until the meat shrank back from the bone ends by about a half an inch. After that would put them in a large bowl with some of the liquid from the boil overnight in the fridge.

The next day he would bbq them on really low heat for about 3 hours and basted them with Mauls BBQ Sauce (Mauls is a St. Louis regionally made sauce, He mixed the sauce with beer, brown sugar and vinegar) each time he turned them (which was frequently). He would get them completely coated including the ends and slightly char them at the end.

They were to die for. I have tried to emulate his rib magic but I lack the love he put into making them. I miss Dad and I miss his ribs. People called his ribs "Meat Candy."
