Welcome. You can download the factory service manual for your bike from the TECH section.
Would suggest investing in a set of SW-Motech crash bars if you are venturing off pavement. They'll pay for themselves the first time you drop your bike on it's side.
You'll also need a rear pit stand and lift spools for the swing arm (cheap on EBay, 10mm for 2007 - 2014, 8mm for 2015+) to perform basic maintenance tasks
Don't forget to adjust your suspension for your riding weight and aim your headlight (after suspension adjustment). Lots of HOW TO videos on YouTube.
Lots of valuable info on accessories and mods on this site. Don't be afraid to ask questions, chances are someone or many people have already encountered the issue and will share their advice and experiences.
Dual sport tire selection is more limited in the Versys 120/70-17 & 160/60-17 tire sizes than it is in the more commonly used 19 inch front wheel found on most adv bikes although it gives better on pavement performance than a larger and narrower 19 inch wheel would. In a pinch you can also use a 150/70-17 rear on the bike if a 160/60-17 is not available.
