Handlebars 7/8 versus 1 inch

Questions here. I've been thinking about buying new handle bars - and noticed a few have talked about the Pro Taper EVO's, or bars that are 1 inch or 1 1/8 inch.

My question is - our stock bars are 7/8 and the EVO's are 1 inch or 11/8 inch. Will all my stock controls work on theses larger bars? Also, the controls have a point in them that attach to the hole in the stock bars, do new bars come with this hole, or do you file the point down? (I'm pretty sure my heated grips won't fit, as they were purchased to fit 7/8)

1 1/8 are tapered bars, meaning the are fat in the middle then taper out to the standard 7/8 at the controls.
