Throttle cable adjustment.

There is a little slack in my throttle cable.
The adjuster is threaded all the way out. If I turn it any more the little ferrule comes completely off the threaded part of the throttle assembly.
Is there any other adjustment point in the system or anything I am overlooking to take up that slack?

It isn't much, but it does make it harder to smoothly match RPM while downshifting and makes my starts jumpier than they otherwise would be.

There are two adjusters, one by the throttle itself, and another one tucked into the frame. Follow the throttle cables down and you'll find it. That will be the one you need to adjust.

Brilliant!

Now I need to find an adjuster that makes the brakes not feel like they're made of garden hose, and the exhaust not sound like a 4-wheeler.

1.) Stainless brake lines and a really good bleed will do it. Maybe some better pads for good measure.

2.) Pick a slip-on muffler, any slip-on muffler

Ah ha! I had the same problem and the slack in the throttle was driving me nuts. Gotta go find that other adjustment spot, I knew there had to be one, I just couldn't see it.
