I just finished up a T31 in the rear though I still have a Dunlop RS III on the front.
I liked it. It handled and rode quite nicely all the way to the end. No drama, stayed hooked up to the pavement, always. No chicken strip left on it. Length of tread life seems to be in line with an Angel GT and RS III on the rear for me, though I can't compare it to the original tire as I bought the bike used.
I was able to buy it for less than US$110 with a rebate. I bought four rears and a front, should be good for just over a year. 2.5 rears to one front seems to be my tire wear ratio, but the bike is ridden hard, principally in the mountains. I ride about 20k miles per year, mostly playing in the twisties.
It works surprisingly decent on dirt roads and light off road, though obviously not so good in mud and deep sand.
I wouldn't hesitate to buy more once my supply is exhausted.
I have been running the S21. It is a fantastic high performance tire. I have run several different tires on my V-650 and it is the best handling and longest lasting tire of the bunch.
Significantly less money than other tires in it's category. Also less money than the S31.

The 016 is literally one step removed from the Q3 track day tire. Except it is decent in the wet, where you have to have a death wish to ride Q3s in the wet. Probably most comparable to a Power RS, though the Michelins probably have a little more tread life and wet grip.
I use the Michelin Road 5 myself, they handle amazingly, dry or wet, worth every penny IMHO. I absolutely wail on them in the canyons, and still get about 7000mi out of a rear and 12,000mi out of a front, I believe the outside compound (they are dual compound front and rear) is the same as what is used on the Power RS, or close to it.
FWIW, the Bridgestone T30/T31 is what Kawi puts on the Versys 1000 from the factory, including the new SE.
They where just 13€ more than the T31 and was my inicial choice.
The other reasons are that I ever had a rear tire that is single coumpond and I'm cusious to try. Also I'm doing a trip in 3 days and the traction skin from the tires is supposed to don't need scrubbing in. So let's see how this goes... And also this tire was considered the best all weather touring tire in a lot of tests, leaning more to a sporty side of touring...
I don’t think you can go wrong with either of those choices tbh, Go with what has a rebate or costs less. Both should give good tread wear on the versys.
I’ve run the stock tires (rear dead at 4k) a Avon Spirit St F/R which I was very impressed with, rear was on track for 8k miles 12.8k km with a very heavy rider and luggage (i weigh 280lbs). Front lasted about 11kmiles/17.7k km and still had life left I just replaced it on a Alaska trip. I’ve run a set of Continental Trail attack 3’s which the rear wore out at 4500 miles 7200km (alaska Yukon road, exceptionally rough on tires), Front is still on the bike with .5mm wear in 4k miles. And I’ve got a Dunlop Roadsmart II on the back now (the redesigned cheaper one). It’s on track for 8k miles so far (2k on it now).
Modern sport touring tires are so damn good that other than the profile difference it’s tough to go with a pure sport tire since they wear longer. Depends on the tire profile if it’s rounded or aggressive. I prefer a quick drop into the corners.
I ended up installing the Contiroadattack 3, as the price was the same and I wanted to try a Single compound tire. I'll let you know when I put some decent miles on it.
